Colombia offers a culinary journey that reflects its cultural diversity, where indigenous, African, Arabic and Spanish influences come together in a delicious symphony of flavors. For students interning abroad in Colombia, we will delve into some of the most traditional Colombian dishes & must-try Colombian foods you didn't know you needed in your life.
Arepas: The Colombian Staple
No discussion of Colombian cuisine (and Venezuelan) would be complete without mentioning arepas. These versatile cornmeal patties are a staple across the country, with each region boasting its very own unique twist. Arepas can be enjoyed at any time of the day and during your time in Colombia you will see street vendors across cities and pueblos (small towns) selling arepas. Our favorite is the 'arepa de huevo' from the Caribbean coast, which is filled with an egg, meat and served hot along with the 'arepa paisa' from Department of Antioquia often topped with butter, salt, cheese and/or avocado. Arepas are a must-try Colombian food for any visitor in Colombia!
Bandeja Paisa: A Hearty Feast (Colombia's national dish)
This iconic dish originates from Antioquia but can be found pretty much across all of Colombia and offers a delightful combination of flavors. The platter consists of ground beef, rice, avocado, frijoles (red beans), chicarrón (fried pork belly), a fried egg, chorizo (smoked Colombian pork sausage) and morcilla (Colombian blood sausage) and plantain, all served on a single plate. The Bandeja Paisa is not just typical food but an entire experience, and it is sure to leave an impression on anyone who tries it - and hopefully finishes it!
Sancocho: A Comforting Stew
Sancocho is a traditional Colombian stew that varies from region to region, but its essence remains the same: a comforting, hearty dish perfect for gathering with family and friends. Typically made with chicken, beef, or fish, the stew is enriched with plantains, yuca, and corn, simmered to perfection. Each spoonful of sancocho delivers warmth and nostalgia, making it a beloved choice during festive gatherings and special occasions. Every person in Colomba has somebody in their family who cooks the 'best Sancocho ever'.
Ajiaco: A Flavorful Soup
Ajiaco hails from the Andean region and is a distinctive Colombian soup, particularly popular in Bogotá. This soup is usually made from a combination of chicken, three varieties of potatoes (Colombia is considered a center of cultivated potato diversity), and corn, all simmered with a unique herb called 'guascas'. The soup is accompanied with a side of rice, avocado and capers with the option to add a dollop of sour cream. Ajiaco is not just a meal; it’s part of the Bogotá experience and has links back to indigenous tribes - a must-try when in Bogotá!
Empanadas: A Snack with a Twist
Empanadas are a beloved snack throughout Colombia, and each region has its own spin on empanadas. Those in Bogotá usually contain rice along with either chicken or meat, whereas in other parts of Colombia it is considered culinary blasphemy to put rice in an empanada. These delightful pockets of flavour are the perfect snack for any occasion and at any time of the day. Similar to arepas, during your stay in Colombia you will see street vendors in cities and los pueblos selling empanadas. Locals enjoy them a somewhat spicy sauce called ají which gives it an extra kick and you just might find yourself falling in love with this traditional Colombian street food.

Colombia not only offers breath-taking biodiversity, landscapes and vibrant cities but also a culinary adventure that is sure to leave you wanting more.
